It is based on celery, a marshland plant variety in the family Apiaceae that is commonly cultivated as a vegetable; and a cannon, a piece of artillery that uses gunpowder or other usually explosive-based propellants to launch a projectile, which may or may not be explosive.
Its name is a portmanteau of "shell," referring to the projectiles it spits, and "celery," the real-life plant it is based on.
Its description mentions peanut butter and raisins, which is a reference to ants on a log, a snack made using celery, peanut butter, and raisins.

Shellery is an early-game glass cannon with the Team-Up trait. You should only play this if the zombie played on the first turn has 2 health, or if you want to land 2 damage to your opponent on the first turn. However, keep in mind that your opponent could be waiting to use a trick to destroy it.
On special stages where you are given plants from the start, you may want to play Shellery to protect them.
This plant has only 1 health, so any damaging zombie or trick can easily destroy it. A better strategy is to use a zombie with the Strikethrough trait such as Hot Dog Imp to damage both Shellery and the plant behind it. Total Eclipse is also able to destroy this plant easily if its health hasn't been boosted.
